Kirbe Schnoor visits Sean Koehler of Twisted Skillet to see how he goes about preparing pollo asado.
This Mexican/Cuban dish is basically grilled chicken that is marinated in citrus juices. The marinade normally has a mixture of citrus juices like orange with spices like cumin, pepper, and oregano.
Twisted Skillet’s menu is inspired by hill country and ranch cuisine, but with a modern twist!
They also make it a priority to take the talents of local farmers, ranchers, chefs, cheesemakers, winemakers, brewers, distillers, and more to create their amazing dishes. Their menu utilizes local and seasonal ingredients.
